What The Big Island Likes to Eat

The question is always asked both by visitors to
the island and to Big Islanders when they travel - what do you like to eat? The
answer: food from all over, food that was once Polynesian, Asian, European or
American. We mix 'em up, give 'em a local twist, and enjoy.
But it's more than just that. We eat delicious
food caught and grown on the island. There's a local fishing industry but many
folks still catch our own. We love fish and shellfish 'ahi, mahimahi, ulua,
moi, 'opihi - raw, fried, steamed and baked.
Some of us still raise chickens and get to enjoy
local dishes like chicken hekka, (once a plantation food now a favorite picnic
fare), using fresh local poultry.
We love our local fruits and vegetables grown in
back yards for salads, desserts and sides or bought at farmer's markets or at
supermarkets that buy from local farmers - sweet onions, kabocha pumpkins,
spinach, guava, pineapple, papaya.
So here are the recipes answering the question
based on how often they appear on our dinner tables, at gatherings, at special
occasions or at our favorite restaurants and hangouts. (We love to eat out
particularly on the Hilo side of the island.)
There are ethnic dishes, old standbys, recipes
from restaurants long gone, nouveau cuisine ones based on exotic crops. There's
plantation kaukau, paniolo campfire or luau fare, as well as dishes by resort
chefs. Some are very familiar, some may only be found in certain areas, some
made only by someone else's grandma or favorite auntie.
The recipes reflect the full range of our
tastebuds and heritage - Korean, Japanese, Chinese, Filipino, Micronesian,
Hawaiian, Okinawan, Puerto Rican, Hawaii regional and Pacific Rim Fusion. No
wonder why we love to eat and the way to a Big Islander's heart is through the
palette. No need to worry about an answer to the question - just give or use
this book of over 120 delicious, relatively easy to prepare recipes. And enjoy
the talk story and nostalgia that accompanies the food.
